Green Goddess Salad

Day 5 - Mediterranean Diet, Green Goddess Salad💚

We’ve been loving this series and hope you are as well! This salad is amazing if you’re following along because it has so many beneficial vitamins and minerals. 🌱

The original creator of this recipe is @bakedbymelissa (on instagram) and we absolutely love it.

 

Ingredients: 

Base:

  • 1 small cabbage
  • 1-2 medium cucumbers 
  • 1 bunch green onions
  • 1/4 cup chives 

Dressing:

  • juice of 1-2 lemons
  • 1 small shallot
  • 1/4 cup olive oil
  • 1 cup spinach
  • 1/3 cup nutritional yeast
  • 1/3 cup walnuts
  • 1 tsp salt
  • 2 tbsp rice vinegar
  • 2 cloves garlic
  • 1 cup fresh basil

 

Instructions:

Step 1: 
Chop all veggies listed into very small, finely diced pieces. Add into a medium sized bowl and mix well.

Step 2:
Add all ingredients for dressing into a blender, adding lemon juice and rice vinegar last for smoother blending. Blend until smooth/fully incorporated.

Step 3:
Add dressing into bowl of mixed veggies. Mix until dressing is evenly combined.

Step 4:
Enjoy alone or with tortilla chips!
