This Mediterranean Salad is so delicious and packed with nutrients. Plus it stores well in the fridge. We want you to know the Mediterranean Diet isn’t meant to limit the amount you eat but rather swap out foods to be more nutritious for your body.
Start by chopping all of the following vegetables:
1/3 cup Go a Little Nuts Walnut Pieces
1 red bell pepper
1 green bell pepper
1 cucumber
1 cup cherry tomatoes
1/2 red onion
8 ounces crumbled or diced feta cheese
Then mix together all of these ingredients for the dressing:
1/4-1/3 cup olive oil
3 tbsp red wine vinegar
1 tbsp dijon mustard
3 tbsp honey
salt & pepper to taste
In a large mixing bowl, combine all veggies, and walnuts then mix well. Then top with dressing. Store in fridge for 4-6 days. Enjoy :)
