Sweet potato walnut pancakes 🥞🍯
Happy first week of fall 💛 We wanted to kick off our series of fall recipes with a healthy staple. These sweet potato pancakes are delicious and much healthier than regular pancakes. With walnuts and cinnamon mixed in they’re an amazing fall breakfast.
Ingredients:
¾ pound sweet potatoes
1 ½ cups all-purpose flour
3 ½ teaspoons baking powder
1 teaspoon salt
½ teaspoon cinnamon
1 ½ cups milk
¼ cup unsalted butter, melted
2 large eggs, beaten

Instructions:
- Peel then cut sweet potatoes into quarters
- Bring a medium pot water to a boil. Add sweet potatoes to water and boil for 15-20 minutes.
- Poke fork into potatoes to see if potatoes are soft. If so, drain and rinse.
- Stir dry ingredients: flour, baking powder, salt, and cinnamon into a bowl.
- Put sweet potatoes in a separate bowl, and mash. Mix in milk, melted butter, and egg.
- Gradually mix in flour mixture until well combined. Lastly add in the walnuts.
- Lightly grease a pan and preheat over medium-high heat.
- Scoop a small label of mixture into pan, and cook until the surface begins to bubble up, around 4 minutes.
- Flip and cook on the other side until golden brown, 2 to 3 more minutes.
- Cook until all of the batter is gone
- Serve with butter and syrup, or whatever is desired.
