Vegan Stuffed Peppers

Thanks for being here for another Mediterranean Diet recipe! These tasted amazing, vegan, and packed with fiber, omegas, vitamin c, vitamin b, and so much more!Ā  šŸ«‘

Ingredients:

  • 1 cup Go a Little Nuts Walnut Pieces!
  • 3 bell peppers
  • 3Ā portobello mushroom tops
  • 1 white or yellow onion
  • 1 tspĀ ground cumin
  • 1 tspĀ chili powder
  • 1 tsp salt & pepper
  • 1 tsp garlic powder
  • 1/2 tablespoonĀ tomato paste (optional)
  • 1 tablespoon soy sauceĀ 
  • 1/2 cup precooked white rice
  • 1/3 cup Mexican blend shredded cheese

Instructions:

  • Preheat oven to 350 degrees Fahrenheit.
  • Slice bell peppers in halve, then remove seeds and inner lining.Ā 
  • Finely chop mushrooms and onions until they are the same size as the Go a Little Nuts Walnut Pieces. If using alternative walnuts, finely chop everything.
  • Mix all chopped mushrooms and onions in a mixing bowl. Add tomato paste, then season with everything listed.
  • AddĀ mushroom and onion mix into a pan, leaving the walnuts aside. Cook mushrooms and onions for approximately 5-7 minutes on medium heat, or until onions start becoming translucent.
  • Add in walnuts to toast. Approximately 2 more minutes.
  • Remove from heat, then add in precooked white rice and soy sauce.
  • Place the halved bell peppers onto a baking sheet lined with parchment paper. Begin spooning the vegan mix into the bell peppers. Top with cheese, place into oven.
  • Bake for 10 minutes, or until the peppers become roasted and cheese is melted.
