Vegan Walnut Meat Lettuce Wraps

These lettuce wraps are incredibly easy to make and so nutritious 🌱
Bonus points for being delicious vegan, or with ground chicken for extra protein.

Ingredients:
1 yellow onion
12 ounces (2-3 heads) romaine lettuce hearts
2 portobello mushroom heads
1/2 cup Go a Little Nuts Walnut Pieces
3 tbsp olive oil 
1 cup cooked white rice

Spices:
salt, pepper, onion powder, garlic powder.
tzatziki sauce optional, see recipe for details.

Instructions:

Step 1:
Start by dicing all vegetables listed into very small pieces. 

Step 2:
Cook rice of choosing.

Step 3:
Sauté veggie mixture until almost fully cooked, then add in walnuts. Season with spices listed above.

Step 4:
Once veggie mix is golden brown, remove from heat.

Step 5:
Line romaine with rice, veggie mix, top with tzatziki if desired.
