Walnut Streusel Pumpkin Muffins

Ingredients

For the Muffins:

  • 3/4 cup canned pumpkin (pumpkin puree)
  • 2 eggs
  • 1/3 cup vegetable oil (or canola/avocado oil)
  • 1/3 cup granulated sugar
  • 1/4 cup brown sugar (light or dark)
  • 1 teaspoon vanilla extract
  • 1⅓ cups all-purpose flour
  • 1 teaspoon pumpkin pie spice
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

For the Streusel:

  • 1/2 cup Go a Little Nuts chopped walnuts
  • 1/3 cup brown sugar
  • 1/4 cup flour
  • 3 tablespoons butter, melted
  • 3/4 teaspoon cinnamon

Instructions

  1. Preheat oven to 350°F. Line a muffin tin or grease lightly.

  2. In a large bowl, whisk together pumpkin, eggs, oil, sugars, and vanilla until smooth.

  3. In a separate bowl, combine flour, pumpkin pie spice, baking powder, baking soda, and salt.

  4. Add dry ingredients to wet ingredients and stir just until combined — do not overmix.

  5. Fold in walnuts.

  6. Scoop into muffin cups ~¾ full.

  7. Bake 18–22 minutes, or until a toothpick inserted in the center comes out clean.

  8. Cool in the pan for 5 minutes, then transfer to a rack.

Yield: ~10–12 muffins
Texture: fluffy, moist, classic bakery-style pumpkin muffin with a crunchy streusel topping
