This Blueberry Walnut Crumble Cake recipe is your new excuse to have dessert for breakfast! The walnut crumble is my favorite part, and using high quality walnuts is a huge factor. Thank you to Amanda's Cookin' for the inspiration for this recipe!
Ingredients:
For the base:
2 cups flour
1 tsp baking powder
1/2 cup sugar
1 egg
1/2 cup milk of choice
1/4 cup butter
2 cups blueberries (I used frozen)
For the topping:
1/3 cup sugar
1/4 cup flour
1/4 cup walnuts
1/ tsp cinnamon
3 tbsp butter
For the drizzle:
1/2 cup powdered sugar
2 tbsp milk
Instructions:
Step 1:
Preheat oven to 350 degrees F, and grease a 9 inch baking pan.
Step 2:
Whisk together flour, sugar, and baking powder. Add small cubes of butter, egg, and milk. Slowly mix in dry ingredients. This batter will be super thick.
Step 3:
Fold in blueberries, this can take a while.
Step 4:
Next for the topping, mix together all of the ingredients except for butter, then add in the butter, recommended to do this by hand until it's crumbly. Spread generously over the base.
Step 5:
Place in oven for 40 minutes or until a utensil comes out with minimal residue when placed in the middle of cake.
Step 6:
Mix together drizzle ingredients, drizzle over the finished product once it has had time to cool down.
Step 7:
Cut into squares and enjoy!
