This creamy walnut pasta recipe is quickly becoming a staple for our weekly dinners. It has a perfect blend of flavors and is so easy to make. Enjoy!
1 Roma Tomato
1 Yellow Onions
2 Chipotle Peppers
1 cup Walnuts
1 cup Sour Cream
1 cup Milk
1/2 cup Sliced Monterey Cheese
350g Fettuccine Pasta
3 tbsp Butter
2 Cloves Garlic
8 ounces Cream Cheese
Salt and Pepper to taste
Instructions:
Step 1:
Boil pasta according to packaging directions.
Step 2:
Toast walnuts until golden brown
Step 3:
Dice onion and tomato, place in sauce pan with melted butter and minced garlic.
Step 4:
Add sour cream into sauce pan once veggies are roasted. Then add the milk and seasonings. Bring to simmer then add walnuts and monterey cheese.
Step 5:
Place this mixture into a blender, blend until smooth.
Step 6:
Put sauce back into the saucepan, add cooked pasta, and combine. Garnish each plate with more walnuts for added texture.
