Strawberry Walnut Goat Cheese Salad
Salad Ingredients:
· 5oz baby arugula
· 2 cups fresh strawberries
· 1/4 cup red onion
· 1 avocado
· 1 cup goat cheese
· 1 cup Go a Little Nuts! Roasted Sea Salt Walnuts
· 5-6 Slices of bacon

Instructions
1. Chop and prepare all the salad ingredients.
2. Cook bacon using your favorite method.
3. Combine arugula, onion, and bacon. Dress with about half of the dressing to start, adding more as desired just before it’s ready to serve and enjoy!
4. Top with avocado, strawberries, and crumbled goat cheese.
For Champagne Vinaigrette Dressing:
· 3/4 cup extra virgin olive oil
· 1/4 cup champagne vinegar
· 1 garlic clove, minced
· 1 tsp honey
· 2 tsp Dijon mustard
· ¼ tsp kosher salt
· ¼ tsp fresh cracked black pepper
Instructions
1. In a small mixing bowl, whisk together champagne vinegar, garlic, honey, Dijon mustard, salt, and pepper.
2. Slowly add olive oil and whisky thoroughly. Continue to whisk until the dressing is fully emulsified.
3. Store in a jar with a lid.
Chill until ready to serve. Shake well before serving.
Notes
· If you cannot find arugula or are just not a fan, you can simply swap it out for your favorite greens.
· Need to make ahead of time? Prep all the ingredients and dressing no more than one day in advance. Do not add the avocado or dressing until just before serving.
· To save on time, use store-bought dressing. While we love a homemade vinaigrette just as much as the next person, it can sometimes feel like you are re-inventing the wheel. There’s no shame in that!
