Pumpkin season is here! You have to try these delicious muffins. Add in protein yogurt or powder to this simple recipe and you have the perfect pre-workout snack.
Ingredients:
1 ounce Go a Little Nuts Walnuts
2 cups all-purpose flour
½ teaspoon salt
½ teaspoon baking powder
1 teaspoon baking soda
3 tsp pumpkin pie spice
¾ cup unsalted butter, softened
1½ cups protein powder
2 large eggs
½ cup protein dense yogurt
1 can 100% pure pumpkin
½ cup semi-sweet chocolate chips
Instructions:
Step 1:
Mix together dry ingredients into a medium sized bowl.
Step 2:
Mix together wet ingredients into a medium sized bowl.
Step 3:
Slowly add dry mixture into the wet mixture, stirring constantly.
Step 4:
Add in ½ cup chocolate chips, add more if desired, and ½ ounce of our walnuts!
Step 5:
Spoon muffin mix into a muffin pan.
Step 6:
Once each cup is evenly filled, top with remaining walnuts for the perfect crunch in every bite.
Step 7:
Bake for 25 minutes at 350 degrees. Top with more protein yogurt or whip cream and enjoy!
